BBQ Pork Stuffed Sweet Potatoes

Another easy weeknight meal with bbq sauce. Slow roasted pork ribs in the crock pot with bbq sauce smothering a baked sweet potato.

Servings: 4-6, plus leftovers.

Time: 8 hours for pork & 1 hour for potatoes. OR 10 minutes for potatoes in the microwave.

Ingredients:

4 lbs. pork ribs (I use country style)

1 large sweet onion, sliced

2 cups Bbq sauce (I use New Primal)

4-6 medium sweet potatoes 

 

 Instructions:

1. Place ribs in a slow cooker on low for 8 hours.

2. Preheat the oven to 450F and place the sweet potatoes on a baking sheet, and into the oven for approximately one hour. (For a quicker meal, you could also microwave the potatoes on HIGH for about 8-10 minutes, or until softened.)

3. During the last hour, stir the bbq sauce into the ribs.

4. Once the potatoes are done, top with the bbq ribs. You can shred them to your liking or leave them whole. They should fall apart no matter what.
