Kaden’s Cowboy Caviar

My baby is turning the BIG 1-3! Yes! He is a teenager. No more kiddos in my house…so sad. Colby turned 16 in September, and now Kaden is 13. WOW! How time flies. Tonight, we celebrated by making his favorite “Cowboy Caviar” to accompany our tacos. It’s the easiest recipe to make and I had all ingredients on hand. Avocado’s, corn, black beans, onion, garlic, a lime, and fresh cilantro. Ya’ll know I always have limes!

Total time: 10 minutes



2 medium sized avocados, chunked

2 tablespoons red onions, diced

3 cloves of garlic, minced

5 cherry tomatoes, diced

1 cup frozen corn, thawed

1 15 ounce can of black beans, drained and rinsed

½ of 1 lime

Salt and pepper to taste

Fresh Cilantro



1.  Open beans and rinse in a colander.

2.  Thaw corn in microwave, drain any excess water.

3.  Chop onions and mince garlic.

4.  Chop tomatoes

5.  Slice and chunk avocados

6.  Add beans, corn, tomatoes, garlic, and onion, salt and pepper, and stir well.

7.  Add avocados in last and gently combine.

8.  Squeeze half of the lime overtop and stir gently one last time.

9. Garnish with cilantro.

10.  Place in fridge and chill until ready to serve!

11.  Enjoy!!
