Peanut Butter Chocolate Chip Balls with Coconut Flour

Trying to make a quick "grab and go" bite for my pre-workout. These are very easy to make and require just a few ingredients.  I made something similar to this for Christmas but coated them in chocolate versus using the chocolate chips.

Prep time: 1 Hour (refrigerate) & 20 minutes to mix together, and form into balls afterward.

Servings: 21,  25 gram balls

Ingredients:

 

  •   56 grams, Coconut Flour (I use Bob's Red Mill)
  •   1/4  teaspoon, Salt
  •   30 grams, Paleo Protein Powder - Aztec Vanilla
  •   1/2 cup, Pure Maple Syrup (organic)
  •   1 1/4 cups or 320 grams, Natural Peanut Butter Chunky. Make sure it the stir kind!! 
  •   2 tablespoons, Mini Chocolate Chips (I use Enjoy Life)

 

 

Instructions:

1. Mix all ingredients except for mini chocolate chips in a large bowl.

2. Fold in the chocolate chips.

3. Place in refrigerator for 30 minutes to an hour for easier handling. 

4. Remove bowl from refrigerator, scoop out and roll with your hands into 25 gram balls. I used a scoop and made sure to weigh each one. It should make 21, 25 gram balls. (You may have a small amount left over for 1/2 a ball!)

5. Enjoy!

** Keep refrigerated in a sealed container for freshness.
