Rice & Spinach

White rice can get a bad wrap sometimes. While it's a great activity carb, it's best when paired with a protein (meat, fish, chicken, etc.) and a fat. Paring a higher glycemic food with a fat and/or protein slows down the absorption into your blood stream thus helping to prevent a quick spike in blood sugar. Here's a quick side for any meal! 

Tip: I add nutritional yeast in place of parmesan for myself!

Ingredients

  • 1 cup Instant Jasmine Rice
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 3 cloves garlic, minced
  • 4 cups packed fresh spinach
  • 2 tsp lemon juice
  • 2 tablespoons parmesan cheese

 

Instructions

  • Prepare rice according to package directions.
  • Meanwhile, heat oil and butter in medium saucepan set over medium heat; cook garlic for 1 min.
  • Add rice to saucepan and coat with butter and oil.
  • Stir spinach into rice mixture.
  • Lastly, stir in lemon juice and parmesan cheese.
  • Serve with your favorite protein!
